Ingredients
Chickpeas, cooked (15 oz can, drained) 7 cups
Lemon juice ½ cup
Tahini 2 cups
Extra-virgin olive oil 1 cup
Garlic cloves, minced 8 ea.
Cumin, ground 3 Tbsp. or as needed
Salt 2 tsp. or as needed
Ground black pepper 2 tsp. or as needed
Extra-virgin olive oil as needed
Paprika as needed
Flat-leaf parsley as needed
Garnish
Directions
Place the chickpeas, lemon juice, tahini, extra-virgin olive oil, garlic and cumin in a food processor. Process to a smooth puree. Season with salt, pepper and lemon juice as needed.
Garnish with a drizzle of extra-virgin olive oil, and sprinkle with paprika and parsley.
