GREEN SALAD

Ingredients
Extra-virgin olive oil 3 oz.
Basil, dry 1 ½ tsp.
Oregano, dry 1 ½ tsp.
Salt as needed
Ground black pepper as needed
Whole grain bread, cut in ½” cubes 6 cups
Parmesan cheese, grated 3 Tbsp.
Romaine lettuce, cleaned and cut 3 cups
Boston lettuce, cleaned and cut 3 cups
Plum tomatoes, seeded medium dice 1 ½ cups
Red onion, sliced ¾ cup
Olive or canola oil ¾ cup
Red wine vinegar or rice vinegar 6 Tbsp.
Salt as needed
Cucumber, thin sliced 1 ½ ea.
Whole Grain Croutons
Directions
For the Croutons: Combine the olive oil, herbs, salt and pepper in a small bowl. Toss with the
bread cubes and parmesan cheese. Place on a parchment lined baking sheet.
Bake in a 375°F oven until golden brown. Set aside.
Combine the lettuces, tomatoes, and red onion.
Right before serving, toss with the oil and vinegar and season with salt.
Garnish each portion with two slices of cucumber and some croutons.
Serve immediately.
Recipe Note
Dandelion greens, baby spinach, arugula and spring mix can all be substituted for the romaine and/or Boston lettuce. Other typical salad garnishes can be incorporated in the salad including cooked legumes, hard cooked eggs etc.
