CLASSIC TOMATO SAUCE DERIVATIVE PUTTANESCA

Ingredients
Extra-virgin olive oil 4 Tbsp.
Onion, small, sliced 2 ea.
Garlic, minced 2 Tbsp.
White wine ½ cup
Classic Tomato Sauce (see index) 2 qt.
Basil, chiffonade 4 Tbsp.
Kalamata olives, chopped ½ cup
Capers 4 Tbsp.
Anchovies, canned, chopped 6 Tbsp.
Directions
Heat a sauce pot and add oil.
Sweat onions and garlic until translucent.
Add remaining ingredients and warm through.
Toss with warm pasta and serve.
