Classic Guacamole

Ingredients
4 to 6 ripe avocados
½ medium white onion – finely diced
2 Roma tomatoes, diced
1 handful fresh cilantro finely chopped (we like the stems).
1 Serrano or jalapeño pepper minced (with seeds)
1 Key lime (juiced)
¾ tea spoon of sea salt
½ tea spoon roasted black pepper
Directions
In a bowl add the diced tomatoes, onions, cilantro and chili-peppers, and mix all together to make a “pico de gallo salsa”, color matters, so, find the balance of color that you think is going to be the most tasty for your palate.
Slice the avocados in half, length-wise, around the big seed in the middle of the fruit, discard the seed, and scoop out the pasty avocado with a spoon, placing it in a different bowl.
With a fork, mash the avocado as chunky or as pasty as you would like it.
Add the salt, pepper and lime juice, then add the “pico de gallo” and mix all together
