CHILE-LIME DIPPING SAUCE

Ingredients
Garlic 4 ea.
Thai bird chiles, chopped 6 ea. or to taste
Sugar 6 Tbsp.
Fish sauce 6 Tbsp.
Lime juice 6 Tbsp.
Water 6 Tbsp.
Directions
Place the garlic, chiles, and sugar in a mortar and pound into a paste.
Transfer to a small mixing bowl and add the fish sauce and lime juice. Set aside for 15 minutes for the flavors to develop. Add water.
This sauce will keep for up to two weeks in the refrigerator.
